Braised Chicken Wings with Mushrooms and Eggs

I cook this dish for lunch today. "This is a very delicious food!", that's what my daughter told me. She said the smell is very nice and the taste good too! She gave me a 10/10. :D

She asked for more rice and chicken because she likes it very much. Also my son likes to eat it too!

Here's the recipe.

Serve 3-4 persons

Marinate Ingredients:
16 chicken mid-wings
2 tbsp cooking wine
2 tbsp sesame oil
1 tsp black pepper

Combine all the above ingredients and keep in the fridge for at least half an hour.

Ingredients:
1 thumb size of ginger
1 clove garlic
2 shallots
8 Dried Mushrooms (washed and soak in the water)
4 hard-boiled eggs (boil in water and shelled)

Seasoning Ingredients:
1/2 tsp salt
3 tbsp dark soya sauce
1 tbsp rock sugar
1 tsp coarse sugar (optional)
1/4 tsp five-spice powder

2 cup water



Method:

Put all ingredients in a pot and add 2 cups of water and bring to the boil over medium heat. Partially cover and simmer for 20 minutes or until the wings are tender.

Serve hot with rice.

Nutella Wholemeal Bread Pudding

I got this recipe from a food magazine (food & travel).

Swirl Chocolate Bread Pudding
Serve 2
Prep Time: 10 minutes
Baking Time: 20 minutes

Ingredients:
4 slices of wholemeal bread, trim the edges
1/2 cup chocolate hazelnut spread (nutella)
1 egg
1 cup evaporated milk (I use low fat Magnolia Milk, 200ml pack)
2 tsp vanilla essence ( I use 1 teaspoon of it)
2 tsp brown sugar
toasted almond flakes for garnishing (very fragrant and crunchy, I put more, Yumm!!) Method:
Spread the chocolate hazelnut spread on the bread, roll it up, then halve it. Place them with the chocolate swirls facing upwards in 2 ramekin bowls.
In a mixing bowl, crack the egg and add in the milk and sugar. Whisk the mixture until pale yellow.
Pour equal amounts of the mixture over the rolled bread in each ramekin and bake in the oven at 175 deg C for 20 minutes.
Remove from oven, sprinkle with some toasted almond flakes on top and serve hot.

Cabbage Rice

This Cabbage rice (also known as kiam png in hokkien) is very fragrant. I boil the pork belly for a few minutes and rinse it thoroughly with tap water. Cut into strips finely and pan-fry till golden brown. While it's browning, I chopped some shallots, garlics, a tablespoonful of dried shrimps, a bit of ikan bilis (optional) and a thumb size of old ginger. Dish up the golden brown pork strips from the frying pan. Fry the chopped ingredients with heated cooking oil and fry till fragrant (remember to add the garlic later, as it will burn easily).Fry the cabbage (cleaned and cut into big chunks) with chopped ingredients till fragrant, add 1 tsp chicken powder, 1 tablespoon of soya sauce, 1 tablespoon of oyster sauce and a teaspoon of sugar for seasoning. Wash 4 cups of rice and add equal amount of water (4 cups). Stir everything together in a rice cooker and let it cook till done and only serve the rice 15 minutes later when it's cooked through. Remember to use a wooden spoon to stir and mix the rice before serving.
