Chicken Pie

When I pass-by "Polar" bakery shop, I will stop by and buy a few Special Pies and Chicken Pies. I never thought of making a Chicken Pie myself as it's so easy to get it in most shopping malls.

I've kept this recipe in my recipe collection (shared by bakingmum) for many years and have read many good reviews about Lee Lee's Chicken pie recipe.

Today I bake this pie for lunch and my children simply love it and wanted more.

Pastry ingredients:
200g butter
250g plain flour
110g plain yoghurt
1 tsp sugar
1 egg yolk
A pinch of salt

Method:
Put all the ingredients into the mixing bowl except yoghurt, and mix to a crumble. Add in yoghurt and mix to a dough. Dough will be very soft so need to keep it refrigerated for at least 30 mins.

Filling ingredients:
350g (12 oz) potatoes, diced (I use 1 big potato, 300g)
1 big onion, diced
50g mixed vegetable (or more if you like)
Sliced canned mushrooms (amount up to you) ~ I use 1 can
2 chicken breasts, diced
1 tbsp corn starch or potato starch mixed with 2 tbsp water
2 tbsp sugar (I use 2 tsp)
2 tsp salt (I use 1 tsp)
1/2 tsp pepper (I use black pepper)

Method:
Heat about 2 table spoon of oil and fry potatoes with about 125ml (4 fl oz) of water and 1/2 teaspoon of salt and cook until soft. Drain and set aside. In a clean wok, heat 2 tablespoon of oil. Fry the diced onion until transparent. Add mixed vegetable, mushroom and chicken. Fry for a while to break up chicken. Add in potatoes. Add in about 125ml (4 fl oz) of water and cook for abt 5 mins. Add in salt, sugar and pepper. Add in the cornstarch and stir to thicken mixture. Set aside for later use.

The steps for the chicken pie will be as per normal. You can either do big pie or mini pie. Just need to roll out the dough, cut the size required and place in a pie dish. Poke hole on the base using a fork and place ingredients on top. Cut another piece of dough to cover the top. Poke a few more times using fork on the cover of the pie and brush with 1 beaten egg.

Baked in a preheated oven at 180 deg C for 30 minutes.

Optional: You can add hardboiled eggs if you like.

Chewy Rolled Oats Raisins Cookies

My children like these cookies very much. I found this recipe at "Happy Home Baking". I have modified the recipe slightly to suit my taste.

(makes 24 cookies)
Ingredients:
150g plain flour
150g rolled oats
1/2 tsp baking soda
150g light brown sugar
50g raisins
1 egg
125ml corn oil
1 1/2 tbsp milk

Method:
Preheat oven to 180 deg C. Lightly grease a baking sheet.
Mix together flour, oats, baking soda, sugar and raisins in a bowl.
In another bowl, whisk together the egg, oil and milk.

Make a well in the centre of the dry ingredients and pour in the egg mixture. Mix together to form a soft dough.

Place spoonfuls of dough well apart onto the baking sheet.
Bake for about 15 minutes. Transfer cookies to a wire rack to cool completely. Store in an air-tight container.

Banana Pancakes

Banana Pancakes

Ingredients:
4 bananas
1 cup plain flour
3/4 tsp baking powder
1/2 tsp bicarbonate of baking soda
2 tbsp sugar
3 tbsp milk
1 egg
1/2 tsp salt

Method:
Mashed banana and mix all the ingredients in a mixing bowl. Let it stands for about 20 minutes.

Lightly grease the frying pan with butter. I don't use butter as I'm using Tefal non-stick frying pan. Use low heat to cook the pancakes till all the sides turn light brown (you will see small bubbles on the surface). Turn over the pancakes and cook for a while. Serve warm or cold with maple syrup.

Breakfast Muffins

These GOLDEN RAISINS CHOCOLATE CHIPS muffins are very yummy! My son likes it very much.
I baked these muffins at 6.30am this morning. You can get the recipe from Allrecipes.com


For easy reference, I post the recipe here. Hope you like it.
Best Ever Muffins (makes 8)
Ingredients:2 cups plain flour
3 tsp baking powder
1/2 tsp salt
3/4 cup castor sugar
1 egg
1 cup milk
1/4 cup vegetable oil


I've added the following ingredients into the batter:
2/3cup golden raisins (chopped)
1/3 cup chocolate chips

Method:
Preheat oven to 200 deg C.
Stir together the flour, baking powder, salt and sugar in a large bowl (I prepare this the night before and store it in a plastic and keep in the fridge).

Make a well in the centre. In a small bowl or 2 cup measuring cup, beat egg with a fork. Stir in milk and oil. Pour all at once into the well in the flour mixture. Mix quickly and lightly with a fork until moistened, but do not beat. The batter will be lumpy. Pour the batter into paper lined muffin pan cups.

Variations:
Blueberry Muffins: Add 1 cup fresh blueberries.
Raisin Muffins: Add 1 cup finely chopped raisins.
Date Muffins: Add 1 cup finely chopped dates.
Cheese Muffins: Fold in 1 cup grated sharp yellow cheese.
Bacon Muffins: Fold 1/4 cup crisp cooked bacon, broken into bits.

Bake for 25 minutes, or until golden.

Braised Chicken Wings with Mushrooms and Eggs

I cook this dish for lunch today. "This is a very delicious food!", that's what my daughter told me. She said the smell is very nice and the taste good too! She gave me a 10/10. :D

She asked for more rice and chicken because she likes it very much. Also my son likes to eat it too!

Here's the recipe.

Serve 3-4 persons

Marinate Ingredients:
16 chicken mid-wings
2 tbsp cooking wine
2 tbsp sesame oil
1 tsp black pepper

Combine all the above ingredients and keep in the fridge for at least half an hour.

Ingredients:
1 thumb size of ginger
1 clove garlic
2 shallots
8 Dried Mushrooms (washed and soak in the water)
4 hard-boiled eggs (boil in water and shelled)

Seasoning Ingredients:
1/2 tsp salt
3 tbsp dark soya sauce
1 tbsp rock sugar
1 tsp coarse sugar (optional)
1/4 tsp five-spice powder

2 cup water



Method:

Put all ingredients in a pot and add 2 cups of water and bring to the boil over medium heat. Partially cover and simmer for 20 minutes or until the wings are tender.

Serve hot with rice.

Nutella Wholemeal Bread Pudding

I got this recipe from a food magazine (food & travel).

Swirl Chocolate Bread Pudding
Serve 2
Prep Time: 10 minutes
Baking Time: 20 minutes

Ingredients:
4 slices of wholemeal bread, trim the edges
1/2 cup chocolate hazelnut spread (nutella)
1 egg
1 cup evaporated milk (I use low fat Magnolia Milk, 200ml pack)
2 tsp vanilla essence ( I use 1 teaspoon of it)
2 tsp brown sugar
toasted almond flakes for garnishing (very fragrant and crunchy, I put more, Yumm!!) Method:
Spread the chocolate hazelnut spread on the bread, roll it up, then halve it. Place them with the chocolate swirls facing upwards in 2 ramekin bowls.
In a mixing bowl, crack the egg and add in the milk and sugar. Whisk the mixture until pale yellow.
Pour equal amounts of the mixture over the rolled bread in each ramekin and bake in the oven at 175 deg C for 20 minutes.
Remove from oven, sprinkle with some toasted almond flakes on top and serve hot.

Cabbage Rice

This Cabbage rice (also known as kiam png in hokkien) is very fragrant. I boil the pork belly for a few minutes and rinse it thoroughly with tap water. Cut into strips finely and pan-fry till golden brown. While it's browning, I chopped some shallots, garlics, a tablespoonful of dried shrimps, a bit of ikan bilis (optional) and a thumb size of old ginger. Dish up the golden brown pork strips from the frying pan. Fry the chopped ingredients with heated cooking oil and fry till fragrant (remember to add the garlic later, as it will burn easily).Fry the cabbage (cleaned and cut into big chunks) with chopped ingredients till fragrant, add 1 tsp chicken powder, 1 tablespoon of soya sauce, 1 tablespoon of oyster sauce and a teaspoon of sugar for seasoning. Wash 4 cups of rice and add equal amount of water (4 cups). Stir everything together in a rice cooker and let it cook till done and only serve the rice 15 minutes later when it's cooked through. Remember to use a wooden spoon to stir and mix the rice before serving.
