This "kee chang" (枧水粽) is very soft and yummy! My sister's Mother-in-law made this. As I don't have syrup to go with it, I use "red sugar" (红糖) instead.

Kid's Chocolate Chips Muffins
When my daughter was studying at the school in the morning, I will make and share homemade sandwiches and noodles with my son. Now it's School Holidays, I have to think of what to prepare for my children's breakfast. For the past few days, I've made pancakes, toasted sandwiches, cakes, oats cookies and muffins for breakfast. Today I baked these yummy chocolate chips muffins for everyone at home.
Here's the recipe... enjoy!
Kid's Chocolate Chips Muffins
Ingredients:
1 1/2 cups plain flour
1 tsp baking powder
1/2 tsp bicarbonate of soda
2/3 cup castor sugar
2 eggs
80g salted butter, melted in microwave oven, let it cool
70ml milk
2/3 cup chocolate chips
Method:
Preheat the oven to 170 deg C. Mix all the ingredients in a mixing bowl and fold in lightly. Do not over-mix.
Add in chocolate chips and mix lightly.
Place paper cups in a baking tray and fill each cup to 3/4 full. Bake at 170 deg C for 20 minutes or till the skewer inserted comes out clean, or turns into golden brown. Remove and cool on the wore rack. Serve warm or cold.

Wrapping of "bak chang" ~ 咸肉粽
Click the image to enlarge.
For so many years, my mom will make about 200 "bak chang" (dumplings) each time.
I started to help her with the wrapping of the dumplings since early 90s. This time my daughter, Sue Jean is helping us with selecting and "counting" the ingredients and put them into a ladle. This helps to save the time of the wrappings. We took the entire day wrapping and cooking of dumplings. It's not for sale, every single dumpling goes to our family members and relatives.
Here's a video of wrapping a "bak chang" ~ rice dumpling.
