Kid's Chocolate Chips Muffins

When my daughter was studying at the school in the morning, I will make and share homemade sandwiches and noodles with my son. Now it's School Holidays, I have to think of what to prepare for my children's breakfast. For the past few days, I've made pancakes, toasted sandwiches, cakes, oats cookies and muffins for breakfast. Today I baked these yummy chocolate chips muffins for everyone at home.

Here's the recipe... enjoy!

Kid's Chocolate Chips Muffins

Ingredients:
1 1/2 cups plain flour
1 tsp baking powder
1/2 tsp bicarbonate of soda
2/3 cup castor sugar
2 eggs
80g salted butter, melted in microwave oven, let it cool
70ml milk
2/3 cup chocolate chips

Method:
Preheat the oven to 170 deg C. Mix all the ingredients in a mixing bowl and fold in lightly. Do not over-mix.
Add in chocolate chips and mix lightly.
Place paper cups in a baking tray and fill each cup to 3/4 full. Bake at 170 deg C for 20 minutes or till the skewer inserted comes out clean, or turns into golden brown. Remove and cool on the wore rack. Serve warm or cold.
